Buttermilk rusks

Ingredients
 

2.5kg     Self raising flour

18ml      Baking powder

700g      Sugar

7ml        Salt

Handful of aniseed or coconut (optional)


625g      Butter
5 cups   Buttermilk
5            Eggs

Preparation method

​

  1. Mix together the self raising flour, baking powder, sugar, salt and aniseed or coconut.

  2. Rub the butter into the mixture.

  3. Mix together the buttermilk and eggs.

  4. Add the buttermilk and eggs with the dry ingredients.

  5. Bake for 1 hour in 180 C. If you do not have a thermo fan in the oven, switch the pans after 1/2 hours.

  6. Let it cool down for a while, cut through and using the drying racks, put back in the oven (110 to 120 C) for about 3 hours.  With a thermo fan, the time will be less.
